JAL’s new inflight meals are not only delicious-the more you eat, the happier your body will be.
The supervising menus created by 5 cutting-edge chefs who have achieved excellent results in the past at "RED U-35" Japanese largest cooking competition that seeks out young talents of the new era, will be sequentially introduced.The menu will be presented in a unique way, incorporating "Ingredients of the Future 50" as well as the aroma, texture, and appearance of each ingredient when the lid is opened.

 

Chef MACHIDA Ryouji

Born in Aichi Prefecture. He became fascinated with “Kikunoi”, a well-known Japanese restaurant, which he saw on a TV program when he was in high school, and started his career in Japanese cuisine. After graduating from Nagoya culinary school, he joined “Kikunoi” in 2008. Since then, he has devoted himself to the "Akasaka Kikunoi" restaurant, honing his skills and serving as the sous chef. He plans to establish his own restaurant after October 2024 (location and timing to be determined).

    This is a JAL original menu arranged from MUJI's "Tomato Keema Curry".

    Stewed with three types of tomatoes and fried onions, finished with mild spiciness using minced chicken, garlic, and ginger.

    Menu supervised by NAMAE Shinobu, grand chef of French restaurant "L'Effervescence".

    Born in Yokohama, Kanagawa.
    After graduating the department of political science at university, Chef Namae became a sous chef at Michel Bras Toya Japan in Hokkaido and The Fat Duck in the U.K. In 2010 he opened L'Effervescence in Tokyo, recently awarded three stars and the new green star award in the 2025 MICHELIN Guide Tokyo.
