Hiroki
“Hiroki,” meaning “the joy of dew ascending,” brewed by Hiroki Brewery, a Sake producer in Fukushima Prefecture, rose to fame after being served at the Working Luncheon of the G8 Hokkaido Toyako (Lake Toya) Summit 2008.
Mr. Hiroki, owner and “Toji”(chief Sake maker) has a unique philosophy unfettered by the traditional conventions of the industry. The Sake created through his technique swiftly gained a reputation among fans of boutique Sakes and is now regarded as one of the most sought after labels.
Whilst most Sake from the “Tohoku” (north-east) region has a clean palate, “Hiroki” possesses a rare pomp and robustness which evoke a Grand Cru class white wine.
Hiroki Shuzou Brewery (Fukushima) / Alc 16%
Kudoki-Jozu Junmai Daiginjo Aiyama 11% Tokubetsu Gentei Shu (Special, Exclusive Sake)
Guided by its enduring commitment to "continuing to craft exceptional sake," Kamenoi-Shuzo, a long-established brewery founded in Meiji 8/1875, has been fastidious about Ginjo-style brewing for every batch of sake it produces.
Kudoki-Jozu ("skilled at flirting"), created exclusively for JAL's international flights, is brewed with rare Aiyama rice - often nicknamed the "diamond of sake rice" - lavishly polished down to just 11%, before being slowly fermented at low temperatures. Experience this one-and-only sake's clean, elegant aroma and the delicate Umami of Aiyama sake rice. Kanpai!

Mori Izo (Mori Izo Shuzo / Kagoshima)
Shochu is a distilled vodka-like spirit made from a variety of ingredients and is a very popular Japanese drink.
Mori Izo is produced from sweet potatoes of the "Koganesengan" variety grown under contract and the product is aged to perfection in traditional stoneware jars.
The production volume is very limited and highly sought after and as a result this shochu is very hard to find.
Moriizo Shuzo (Kagoshima) / Alc 25%
Hyakunen no Kodoku
Long-established Kuroki Honten Co., Ltd. was founded in 1885, and ever since has been solely devoted to producing Shochu. Since then, as the top-runner of Shochu brewers, they have been producing various Shochus for serious aficionados of this traditional distilled spirit of Japan, including “Hyakunen no Kodoku.” A masterpiece, “Hyakunen no Kodoku” is made from the malt of their barley Shochu “Naka-Naka” for JAL’s Business Class which is matured slowly in American White Oak barrels. The amber liquid created from the leisurely flow of time is the prelude to an exquisitely mellow flavor, which deserves to be a museum piece. You can enjoy the quintessence of this Shochu served straight, on-the-rocks or with mineral water. (In the wintertime, try it blended with hot water and savor the ample aroma.)
