Developed his knowledge of wine and sake by managing the family sake retail business, Yamajin Co., Ltd., based in Utsunomiya City.
Acquired the world’s highest wine qualification, Master of Wine, in 2015.
Established a firm position in the global wine industry.
Serves as a judge for many wine competitions across the world, such as the International Wine Challenge (IWC), held in London, one of the biggest wine competitions in the world.
Awarded “IWC Personality of the Year 2016”.

Born on April 24, 1976 in Sapporo, Hokkaido. Joined the service industry after working as bartender. Facinated by wines, he went to France and on returning to Japan, acquired a sommelier qualification in 2000. After participating in competitions and achieving experiences, he went to France again from 2006 for 2.5 years to deepen his understanding of wines. He continues to visit wineries and producers and communicate the essense of wines as Japan's first wine taster. Also knowledgeable of Japanese sake and sochu, which he highly acclaimed for creating the perfect match of wine, Japanese sake and cuisine.
Delamotte Blanc de Blancs N.V.
Delamotte, established in 1760, is the sister maison of "Salon," the most sought-after champagne in the world. In years when a "Salon"vintage, made from 100% Grand CruChardonnay grapes that constitute a mere 5% of the entire production, is not produced, the grapes are utilized for this Blanc de Blancs. With refreshing, inviting flavors of citrus and golden-brown toast, you'll unwind with this champagne and it is versatile enough to be enjoyed not only as an aperitif, but also as an elegant accompaniment to your meal.
Boschendal Chardonnay 2017
Boschendal is a historic winery dating as far back as 1685. These Chardonnay grapes are harvested in the Elgin valley, the most talked-about cool climate region in South Africa. Savor the harmony of aromas - lemon, pear, cultured butter and cinnamon - and the fresh acidity that acts to intermix and develop all of the flavors of this wine into an elegant, dry finish.
Frescobaldi Nipozzano Riserva Chianti Rúfina DOCG 2016
Of the many wines crafted in the Chianti region of Italy, this wine bearing the name ‘Rufina’ is produced from very exclusive vineyards.
This is one of Frescobaldi's signature wines, with an unbroken history going back to1864. Plum and blackberry, with Asian spice nuances similar to vanilla and cloves create a condensed aroma.
This 2016 full-bodied Chianti will delight you with its sumptuous depth and richness, all in harmony with its firm tannins.
Château Mercian Moegi 2017
Wine connoisseurs throughout the world have evaluated Château Mercian highly in the past few years, proof of the excellent quality of Japanese wines.
This Moegi 2016 features apple and pear aromas with a hint of cinnamon. Gentle, velvety and tempting, slightly rich on your palate, with a well-balanced harmony between the fresh acidity and flavors.
Japanese citrus comes to mind as you savor this dry wine through to the afternote.

We are proud to serve you with our Japanese sake selection onboard, from famous seasonal varieties of Japanese sake that include Ho-oh Biden and Sha-raku, as well as popular shochu (distilled liquor) choices such as Naka Naka and Tsurusora.
“Tsurusora” is made from 2 kind of potatoes cultivated in Narita area and has fruity and rich taste.

Ho-oh Biden (Phoenix’s Beautiful Rice Fields) Junmai Daiginjo, Asahi Rice, JAL Original
This sake is crafted from Asahi-mai Rice, a species of Japanese rice from which many of the sake-rice varietals on the market today are derived.
Ho-oh Biden’s exquisite aroma of Muscat expands, revealing a youthful taste with crisp acidity and sweet notes in a harmonious balance.
As the sake warms up, you will sense a softness on the palate along with mellow and gentle Umami.
“Sha-raku,” Limited Edition Junmai Daiginjo, JAL Original
This Junmai Daiginjo was created exclusively for JAL passengers using Gohyakumangoku Rice grown in Fukushima Prefecture and polished to 50%.
Sense the wafting elegant aromas evoking bananas and pears, the velvety palate and fresh, clean sweetness and acidity.
Sha-raku continues to delight, exhibiting a refined afternote with a crisp edge.
