Shinobu Namae

Grand chef of "L'Effervescence"

For JAL Business Class. Born in 1973. After graduating the department of political science at university, he became a sous chef at Michel Bras Toya Japan in Hokkaido and The Fat Duck in the U.K. In 2010 he opened L'Effervescence in Tokyo, a two-star Michelin restaurant and winner of the Sustainable Restaurant Award, a special award at Asia's 50 Best Restaurants.

What I always keep in mind when I cook is that the meal is delicious, the presentation is eye-pleasing, and the food is good. I will give my best while praying that everyone will enjoy delicious healthy in-flight meals that is satisfying but not too heavy on the stomach.
