Japanese course menu from Japan, except to Jakarta, is created by Mr.Hiroshi Takami, 5th generation Chef of "Kyoryori Watakame" in Kyoto which story goes back to Genjigannen(1864), getting most out of food materials of the season by adopting best of the best culinary technique. You can enjoy, "Zensai" like Box of Chocolate and vegetables which transformed into glass and flowers of the season, fine tuned Japanese hospitality which you can taste, using culinary technique adopted in Kyoto.
The continental menu from Japan, except to Jakarta, is designed by Chef Seiji Yamamoto of "Japanse cuisine Ryugin" boasting 3 Michelin star for 2012 and placed 20th in the World's 50 Best Restaurants 2011, as his expression of a unique continental cuisine that may be enjoyed nowhere else but in the stratosphere.
We hope you will fully savor the selections of dishes that are based on the traditional techniques of Japanese cuisine, yet through Chef Yamamoto's brilliance extend beyond, infusing a world perspective, and are exclusively served in Japan Airlines First Class.

Minami-Uonuma surrounded by the mountains is located in south part of Niigata prefecture. Its clear water, rich soil and mountain climate produce delicious rice with traditional agricultural techniques. To serve the gorgeous rice with the best condition, the amount of water and the length to be steamed are our particular points.
Please savor the superlative flavor of traditional Japanese rice.

Japanese natural cheese is served from March 1st.
Each cheese is served with each special garnish that makes its taste more rich. At first, take a small piece and taste its own flavour, and then take another piece with the special garnish and another way to enjoy the cheese will be founded. Japanese natural cheese suites to wine, also Japanese sake as well.
