MORISHIMA 25+Silver Junmai Daiginjo
Morishima Shuzo was founded in 1869. The Oya stone (a type of volcanic tuff stone mined at Oya) featured on Morishima 25+ Silver’s etiquette is a piece of rock from the brewery’s warehouse destroyed by the Great Eastern Japan Earthquake, a symbol of the fortitude to conquer any kind of adversity. This Junmai-Daiginjo is crafted from "Omachi" sake rice polished up to 40%, and features a calm, elegant Ginjo aroma segueing into a clean and transparent taste.Savor Morishima 25+ Silver’s gentle acidity as it rises up, along with the glossy, yet classy flavor.
Morishima Sake Brewery (Ibaraki) / Alc 15%
Hiroki
"Hiroki," meaning "the joy of dew ascending," brewed by Hiroki Brewery, a Sake producer in Fukushima Prefecture, rose to fame after being served at the Working Luncheon of the G8 Hokkaido Toyako (Lake Toya) Summit 2008.
Mr. Hiroki, owner and "Toji"(chief Sake maker) has a unique philosophy unfettered by the traditional conventions of the industry. The Sake created through his technique swiftly gained a reputation among fans of boutique Sakes and is now regarded as one of the most sought after labels.
Whilst most Sake from the "Tohoku" (north-east) region has a clean palate,"Hiroki" possesses a rare pomp and robustness which evoke a Grand Cru class white wine.

Genuine Shochu Mori Izo (Mori Izo Shuzo / Kagoshima)
Since its founding in 1885, Mori Izo has made its shochu using traditional earthenware jugs. Upon inheriting the distillery in 1986, 5th-generation owner Mori Satoshi set to work refining production methods with an even greater emphasis on quality, and in 1988, the first Mori Izo--named after his father, the 4th-generation owner--went on sale. This shochu is made from Kagoshima sweet potatoes grown on consignment and aged and fermented in traditional earthenware jugs, resulting in a distinctive sweet, mellow flavor. Valuing quality over quantity, even today Mori Izo produces only 50 jugs of 4 koku each, the same amount as when it was founded. It is so difficult to obtain that it has become known as the "phantom shochu."
One koku equals 180 liters.

Hyakunen no Kodoku
Long-established Kuroki Honten Co., Ltd. was founded in 1885, and ever since has been solely devoted to producing Shochu. Since then, as the top-runner of Shochu brewers, they have been producing various Shochus for serious aficionados of this traditional distilled spirit of Japan, including "Hyakunen no Kodoku." A masterpiece, "Hyakunen no Kodoku" is made from the malt of their barley Shochu "Naka-Naka" for JAL’s Business Class which is matured slowly in American White Oak barrels. The amber liquid created from the leisurely flow of time is the prelude to an exquisitely mellow flavor, which deserves to be a museum piece. You can enjoy the quintessence of this Shochu served straight, on-the-rocks or with mineral water. (In the wintertime, try it blended with hot water and savor the ample aroma.)

Kokuto de Lequio
This liqueur is created by dissolving brown sugar from the islands of Iriomote and Yonaguni, each with its own character, into fruity awamori made with sakura yeast. It uses full-bodied awamori and rum as base spirits and adds two varieties of brown sugar--Iriomote with its rich, creamy flavor and Yonaguni with its bitter aftertaste--to create a taste like none you’ve experience before.
