In-flight Meals Complied by Young Chefs.

We welcomed the six young chefs from RED U-35, Japan’s largest culinary competition aimed at discovering young talent of tomorrow. JAL will serve new in-flight meals in a variety of cuisines such as Japanese, French, Italian and Chinese cuisines.

This is JAL's first time in-flight meal collaboration with Tanita Cafe, serving an original menu including proteins, vitamins, and dietary fibers that increases immunity.
The mochi-wheat rice, which is rich in dietary fiber and has a petit texture, contains clams and root vegetables with iron and zinc. The salt koji chicken breast containing vitamin B6, and tomato sauce containing vitamins A, C, and E, which have antioxidant effects, are a perfect match for a healthy salad bowl.
The leaflet introduces a column on immunity and Tanita's original stretching program.
We hope you enjoy the new in-flight meal service with Tanita, offering you a total health support for your trip.

Menu supervised by Shinobu Namae, grand chef of French restaurant "L'Effervescence".

Born in Yokohama, Kanagawa.
After graduating the department of political science at university, Chef Namae became a sous chef at Michel Bras Toya Japan in Hokkaido and The Fat Duck in the U.K. In 2010 he opened L'Effervescence in Tokyo, recently awarded three stars and the new green star award in the 2021 MICHELIN Guide Tokyo.
